Eli Imbery has been on Whidbey most of his life. Earlier this year, he talked with his good friend, Carol Coble, about whether she would be interested in becoming his manager and co-owner of a food truck selling Teriyaki foods. Eli and Carol have been friends for several years, and Eli was impressed with Carol’s skills. They both agreed that more food options were needed on South Whidbey. Their collaboration led to IC Teriyaki, a food truck offering a broad menu of Japanese foods, which opened on August 19, 2021. They note, “ Before we opened, there were no teriyaki food options available on South Whidbey.”

Once they agreed on the idea for the food truck, they began looking for cooks. They now have two cooks who are experienced in making Japanese food. Eli ran an ad looking for experienced cooks and he found two people with the knowledge and skills he wanted. Ryan Airriess attended culinary school and had extensive experience in the preparation of Japanese food. Eli says, “At our first interview, I was sold on his abilities.” Chandy Davis also provided a great impression when she was interviewed for the job.

The menu for IC Teriyaki includes chicken, beef and tofu teriyaki, spring rolls, gyoza, green leaf salad with cabbage and carrots in sesame ginger vinaigrette dressing.

Food is available for take-out, but there is also a covered area where people can eat when they don’t want to do take-out.

Carol and Eli have food items that are appropriate for lunches or dinners. They notice that most of the people who are coming to their food truck are locals, many of whom say they are sharing with their friends the quality of the food served at IC Teriyaki.

IC Teriyaki is serving food from a red truck at 1806 Newman Road (Petosa Corner) in Freeland. Current business hours are Wednesday – Saturday, 11:00 a.m. – 7:00 p.m. and Monday, 11:00 a.m. – 7:00 p.m.
